El Primer Plato de Nacho Manzano
Con apenas 14 años, Nacho preparó su primer plato en el restaurante familiar: un torto de maíz relleno de un revuelto de huevos, queso cabrales y cebolla caramelizada. Este plato marcó el comienzo de su carrera culinaria y se ha convertido en un clásico.
El sabor combinado de los ingredientes es exquisito y demuestra la creatividad de Nacho. Este plato es una muestra de cómo puede combinar la tradición asturiana con innovación.
La Preparación de los Tortos de Maíz
Para preparar los tortos de maíz asturianos, es necesario preparar la masa. Se mezclan 100 gramos de harina de maíz, 25 gramos de harina de trigo, media cucharadita de sal y media de azúcar con 125 gramos de agua tibia. Luego, se deja reposar unas 6 o 8 horas en el frigorífico.
Mientras reposa la masa, se prepara el relleno. Se hace la crema de cebolla con queso azul, cuya cebolla pochada da un sabor caramelizado exquisito. Se integran también los huevos de corral. Sin dejar de remover, se cuajan poco a poco a fuego lento para formar una crema de huevos revueltos.
Después de darle forma de tortilla a la masa, se freyen con abundante aceite. Cuando están listos, se emplatán y se rellena con los huevos revueltos con cebolla y queso azul.
